Innsbruck - Graz Driving Route Advice, Please Help

I really would appreciate some advice here if someone can help.
We will be visiting Austria in September, after 2 nights in Vienna we will be renting a car and heading out on a road trip. Having never been there before I have been doing a lot of reading and I think I have formulated a semi-educated itinerary : ) But I would really appreciate any input.
From Vienna we will be going to Salzburg for 2 nights, I understand that’s about a 2 hour drive? From Salzburg we’ll then be heading for the Innsbruck area for a one week rental, I guess that’s likely about another 2 hour drive? From there we’ll be daytripping, Switzerland, Germany, Italy… I imagine we’ll be all over the place.
After the week rental, we’ll be leaving to head back to Vienna for our flight out the next evening. We’d like to see a different part of the country so we would like to put together a route through the southern part of Austria, or northern part of Italy, or a combination, heading towards the Graz area for an overnight. I’m really looking into a staying somewhere around Koflach or Voitsberg? We really want to visit the Piber Stud Farm. Any reasonably priced triple room suggestions in that area? So far I’m checking accommodations using the Steiermark tourism website right now.
I’m really having trouble mapping out that type of route from Innsbruck – Graz without using the autobahn through Salzburg. Mapquest and Mappy aren’t helping so far. My research so far has told me that it would likely be a 4 – 5 hour trip to Graz by that type of route? Then 2 hours to Vienna to next day? We’d have to be at the airport by 3 – 4 pm.
I know this is quite the ramble, and I apologize, but if anyone can help I would be very grateful. Any tidbits or nuggets of info would all be appreciated. I really don’t want to bite off more than I can chew and have trouble getting to Vienna for our flight.

Vienna to Salzburg, city center to city center, will be about 2.5 to 3 hours on the Autobahn; much longer on “federal” roads where you'll go through town after town with heavy traffic. From there to Innsbruck (a boring town, by the way) is about 90 minutes via Autobahn.
If you're leaving Innsbruck for a flight that leaves the following evening from Vienna you don't have time for many stops or much off-Autobahn driving. I would recommend that instead you spend less time in Innsbruck and work your way back to Vienna along a southerly route, stopping two or three nights along the way. Drive the Gerlos Pass, see the Krimml Falls, maybe drive the Grossglockner (a fantastic mountain road), go south of Graz along the Slovenian border and drive the Südsteirische Weinstrasse (Styrain Wine Road). Combine some Autobahn driving with backroads. You need maps with a scale of 1:200,000 or, even better, 1:150,000.
